Equipment

  • Baking dish

Ingredients

  • 4 panko breaded chicken tenders
  • Salt and pepper to taste
  • 1 jar marinara sauce of your preference
  • 1 tsp Italian seasoning
  • 1 handful fresh basil leaves
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat your oven to 400°F (200°C).
  • Bake the breaded chicken according to package instructions. (Tip: cook it halfway, then finish it in the oven at step 5.)
  • Transfer the cooked chicken to a baking dish and layer with marinara sauce.
  • Spoon more marinara sauce over each piece of chicken, then sprinkle with Italian seasoning, shredded mozzarella, and grated Parmesan cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil leaves, if desired, before serving.

Notes

  • Shortcut: Frozen panko-breaded chicken cutlets speed things up and turn out less greasy and less dense than homemade breaded chicken. Pre-cooked cutlets work too, but you may lose some flavor from overcooking.
  • Extra Crispy: Cook the chicken about halfway, then finish baking it once it's topped with sauce and cheese in step 5.
  • Serving Suggestion: Serve with pasta, garlic bread, or a salad.
