Vietnamese Thit Kho, also known as Braised & Caramelized Pork and Eggs

This is what i call Vietnamese comfort food. This is easy and simple to make

Ingredients:

2 lb pork belly or pork shoulder, cut into bite-sized pieces

6-8 hard-boiled eggs, 

3 cloves garlic, minced 

2 shallots, thinly sliced

2-3 Thai chili chopped 

2 tablespoons fish sauce

2 tablespoons soy sauce

1 tablespoons sugar

1 tablespoon vegetable oil

2 cups of coco rico soda

salt to your liking 

Freshly ground black pepper to your liking 

Fresh green peppercorns optional 

2 scallions chopped 

Instructions:

In a bowl, marinate the pork pieces with minced garlic, sliced shallots, fish sauce, soy sauce, sugar, black pepper and salt. Mix well and let it marinate for at least 15 minutes in the refrigerator. Heat vegetable oil in a large pot over medium heat. Add the marinated pork and cook until it starts to brown, about 5-7 minutes.

Once the pork is browned, add the hard-boiled eggs to the pot. Pour in the coco rico soda, making sure the pork and eggs are submerged. Bring to a boil, then reduce the heat to low and let it simmer, uncovered, for about 30 minutes to an hour, or until the pork is tender and the sauce has thickened, stirring occasionally. If the sauce reduces too much before the pork is tender, you can add more water, 1/4 cup at a time. Once the pork is tender and the sauce has thickened to your liking, taste and adjust the seasoning if needed. Garnish with chopped scallions, fresh green peppercorns and chopped Thai chili.

Serve hot with steamed rice.
