Thai chopped beef basil:

This is one of those quick meals that can still be fresh and not a boxed or processed food meal. In our house there is always fresh rice in the rice-cooker so thats why this can still be a fast meal.

Ingredients:

1 lb ground beef

Salt and pepper to your liking 

2 tablespoons soy sauce

2 tablespoons lime juice

1 teaspoons sugar 

1 tablespoon fish sauce

4 cloves garlic, minced

1/2 cup of chicken broth 

2 chopped scallions 

1 medium sized carrots julienne

1 cup fresh basil leaves

2 red chili pepper chopped (adjust to your liking)

1 tablespoon vegetable oil

Cooked jasmine rice, for serving

Instructions:

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.

2. Add the minced garlic to the skillet and cook for 30 seconds .

3. Add the ground beef to the skillet and salt and pepper to your liking, and cook breaking it up with a spatula, until it is browned and cooked through.

4. In a small bowl, mix together the sugar, soy sauce, lime juice, chili and fish sauce.

5. Pour the chicken stock over the cooked beef and add carrots stir to combine. Cook for another 2-3 minutes.

6. Add the fresh basil leaves to the skillet and stir until wilted. Turn off heat.

7. Pour sauce mixture over beef. Topped with scallions.

8. Serve the Thai chopped beef over cooked rice.
