Thai Chili Garlic Mahi Mahi

Classic Thai dish bursting with flavor…….

Ingredients:

– 4 fillets of mahi mahi

– 3 cloves garlic

– 1 lemongrass stick

-1 cilantro root or 1/4 cup of cilantro stems

– 2 tablespoon fish sauce

– 1/4 cup chicken stock

– 1 teaspoon sugar

– 3 Thai chili peppers (adjust to taste)

– 2 tablespoon fresh lime or lemon juice

– Fresh cilantro for garnish (optional)

– Salt and pepper to taste

Instructions:

1. In a mortar pastel make chili peppers, cilantro root or stem and garlic into a paste. In a small bowl mix together paste, chicken stock, fish sauce, lime or lemon juice and sugar until the sugar is dissolved. Set aside.

2. Heat steamer medium-high heat. Season fish fillets with salt and pepper.

3. In heatproof dish, lay lemongrass under fish fillets and steam for 8 minutes.

4. Pour the sauce mixture over the fish in dish and steam for another 7 minute.

5. Serve the fish hot, garnished with fresh cilantro and accompany with rice or any side or vegetable you choose.
