Asian Fusion Chicken Thighs

Ingredients:

8 chicken thighs

1/4 cup apple cider

1/2 cup less sodium soy sauce

1/4 cup of fish sauce (3 crab nuoc mam)

1/2 cup sunflower oil or avocado oil or your choice of oil

10 clove garlic

1 tablespoons grated ginger

4 Thai chili pepper or any kind of pepper to your liking

1/4 cup vanilla sugar or regular sugar 

1/2 tablespoons of Red Sea salt or 1 tablespoon salt 

Wild Madagascar peppercorn crushed or black peppercorn to your liking

8 spring thyme

6 large kaffir lime leaves finely chopped or 2 lime zest

Fresh cilantro or parsley chopped to garnish 

Lime or lemon wedges to garnish 

Instructions:

In large bake proof dish combine all the ingredients but the chicken and mix until sugar and salt dissolve

Add in chicken and let it marinate 4-6 hours

Remove half of the marinade liquid and discard

Preheat oven at 475 degrees 

Cover with foil and bake for 45 minutes. Remover foil and bake additional 10-15 minutes to crisp up skin.

If using skinless, keep covered and bake for 10-15 more minutes or until throughly cooked.

Serve with jasmine white rice and vegetables.
