Ube Waffles The Frugal Gastronomy Way

Trader Joe’s seasonal Ube Waffles the Frugal Gastronomy way (stock up when in season for this year round treat.

Ingredients:

-1 box of Trader Joe’s Ube Mochi Waffle Mix

– 1/2 jar of Trader Joe’s Ube Jam

1/4 cup of water

1 cups of coconut milk

– 3 large egg

3 tablespoons melted butter

1/2 teaspoon ube extract optional 

Instructions:

1. Preheat your waffle iron according to manufacturer’s instructions.

2. In a large mixing bowl mix melted butter, coconut milk, water, ube extract if using, and eggs one at a time.

3. Pour in 1/2 of the ube mochi waffle mix and whisk until well combined. Repeat. Be careful not to overmix; a few lumps are okay.

5. Lightly grease the waffle iron with cooking spray or melted butter.

6. Pour enough batter onto the waffle iron to cover the waffle grid, add a tablespoon of ube jam to the center and pour batter enough to cover jam, close the lid and cook according to the waffle iron’s instructions, usually for about 3-4 minutes or until golden brown.

7. Carefully remove the waffles from the iron and serve warm with your favorite toppings such as whipped cream. 

Enjoy your homemade Trader Joe’s Ube Waffles as a breakfast item with some syrup of your choice or serve as a dessert !!
