Ube Waffles The Frugal Gastronomy Way

Ingredients
  

  • 1 box Trader Joe's Ube Mochi Waffle Mix
  • 1/2 jar Trader Joe's Ube Jam
  • 1/4 cup water
  • 1 cup coconut milk
  • 3 large eggs
  • 3 tablespoons melted butter
  • 1/2 teaspoon ube extract optional

Instructions
 

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a large mixing bowl mix melted butter, coconut milk, water, ube extract if using, and eggs one at a time.
  • Pour in 1/2 of the ube mochi waffle mix and whisk until well combined. Repeat. Be careful not to overmix; a few lumps are okay.
  • Lightly grease the waffle iron with cooking spray or melted butter.
  • Pour enough batter onto the waffle iron to cover the waffle grid, add a tablespoon of ube jam to the center and pour batter enough to cover jam, close the lid and cook according to the waffle iron's instructions, usually for about 3-4 minutes or until golden brown.
  • Carefully remove the waffles from the iron and serve warm with your favorite toppings such as whipped cream.
