Thai Chili Garlic Mahi Mahi

Ingredients
  

  • 4 fillets mahi mahi
  • 3 cloves garlic
  • 1 stick lemongrass
  • 1 cilantro root or 1/4 cup cilantro stems
  • 2 tablespoon fish sauce
  • 1/4 cup chicken stock
  • 1 teaspoon sugar
  • 3 Thai chili peppers adjust to taste
  • 2 tablespoon fresh lime or lemon juice
  • Fresh cilantro for garnish optional
  • Salt and pepper to taste

Instructions
 

  • In a mortar and pestle, make the chili peppers, cilantro root or stem, and garlic into a paste. In a small bowl mix together the paste, chicken stock, fish sauce, lime or lemon juice, and sugar until the sugar is dissolved. Set aside.
  • Heat steamer on medium-high heat. Season fish fillets with salt and pepper.
  • In a heatproof dish, lay the lemongrass under the fish fillets and steam for 8 minutes.
  • Pour the sauce mixture over the fish in the dish and steam for another 7 minutes.
  • Serve the fish hot, garnished with fresh cilantro, and accompany with rice or any side or vegetable you choose.

Notes

Enjoy your Thai chili garlic mahi mahi! For an extra kick, add more Thai chili peppers to the paste.
